After 8 years of steadily increasing the size of our menu, we have finally taken the time to carefully look through it and incorporate extensive feedback from you.
We have known for some time that the number of options is quite overwhelming, especially for newcomers. Indeed, our amazing kitchen folks need to know how to execute over 100 recipes and procedures just to make the standing menu – not including specials!
One of the main pieces of feedback we have gotten over the years is that many of you want to build your own smoothies, juices and grain bowls and get consistent pricing on them.
After extensive consideration and testing, we have transformed the look and depth of the menu to what we think will benefit everyone significantly. Our mission is to be a sustainable cafe, and with this new menu, we are now able to spend more time on creating delicious specials highlighting local farms and seasonal produce.
While we have slightly reduced the size of our standing menu, we created dedicated, easy to understand “Build-Your-Own” options! We recognize that many of you love to modify menu items, so to accommodate, you can now create your own juices, smoothies and grain bowl creations with ease.
Lastly, we have revamped our standing juice menu to highlight juice concoctions for specific needs. We are introducing new beverages that specifically give the body the nutrients it needs to repair and rebuild itself and help cure what ails you! Don’t see one of your old favorites? Feel free to use the Build Your Own Juice menu to create it! If you don’t remember it, your friendly Chaco counter person can help you.

Raw and Vegan Food
The first café in the Seattle area that features a daily Raw Foods menu. Composed of fresh organic produce, organic nuts, seeds, spices and oils, our menu changes often and with the seasons. It is approachable for the curious neophyte, delicious for the experienced Raw Foodist, and perfect for someone looking for a unique vegan meal. We also have amazing vegan sandwiches, several daily hot vegan soups, rice and quinoa bowls, and a daily selection of vegan and wheat/gluten free baked goods.
Living Juice, Wheatgrass and Smoothies
Always fresh and never pasteurized, our juices are prepared and juiced to order. Different from the ubiquitous corporate juice and smoothie chain, we offer beautiful 100% juice drinks without unhealthy, sugary fillers and supplements of dubious nutritional value. Nutrients and vitamins in fresh produce are much more readily absorbed by the body than pills or supplements. As the old adage goes "make your juicer your drugstore."
Espresso and Tea Done Right Stumptown Coffee Roasters, based in Portland, OR, is committed to high quality coffee using business practices that support independent farmers through direct-trade. We work with Stumptown to find a seasonal offering that best suits the cafe's atmosphere and its mission statement. Our drip is always certified organic and direct-trade. Our espresso is a blend of direct-trade and organic coffees, also from Stumptown Coffee Roasters. Our loose-leaf tea is organic and comes to us via Mountain Rose Herbs in Oregon. Our milk is certified organic from Organic Valley, a co-op of family run organic farms.
Additionally, we recycle and compost more than 90% of our total waste and don't offer plastic utensils. Wireless internet is available and free. Thank you for choosing to support a small business that has chosen to support our world.
